
Hello Lovelies!
With all the craziness going on, I thought a positive message for you all would be to share how I have found easy (healthy and affordable) ways to make good at home (aka normal adulting) so that you can stress a little less about making things work. Everything I eat now is included on this list and I have also included other ideas for varying dietary needs! Let’s get to it!
The List
Ok probably the most important pieces here is the shopping list you’ll need when you head to your empty grocery store for the fifth time this week. Not all of these items are necessary for the recipes but they are just good things to have!
Produce
- Sweet potatoes
- Broccoli
- Apples
- Tomatoes
- Avocado
- Banana
- Carrots
- Kale or other greens
- Lettuce
Dry Food
- Rice cakes (my personal favorite)
- Canned soup
- Canned beans and corn
- Bulk snack mixes
- Tortillas
Protein
- Eggs
- Tuna packets
- Salmon
- chicken breast
Other
- Shredded cheese
- Orange juice or supplement
- Seltzer water
- Olive oil
- Dark chocolate
- Hummus
- Natural peanut butter
Taco Omelettes
Here’s my favorite super cheap, super easy meal at the moment, and it’s exactly how it sounds.
You will need:
- panini press or pan or literally any hot surface
- eggs
- tortillas
- cheese
- Salt and pepper
- butter
Ok so first you will heat up whatever you are using, use the butter to help prevent things from sticking. Next place two tortillas (I prefer corn tortillas) on the surface and add a thin layer of cheese. While that heats up you will scramble two eggs on the other side, add salt and pepper, wait for everything to cook properly, then put the eggs in each taco, move everything to a plate, fold, and enjoy!
Greek Pasta Salade
This one is also pretty easy, you will need:
- feta cheese
- red and green peppers
- Cucumber
- olive oil and balsamic vinegar
- pasta, any kind
- chicken for more protein
Ok so cook the pasta, chicken, and peppers separately as you like them, and then mix everything together bc it’s a salade. Enjoy!
Gluten Free and Vegan Banana Bread
This is a fun recipe a friend shared with me, and his one is perfect for most dietary needs!
You will need:
- bread pan
- 3 ripe bananas
- 3/4 cup maple strup
- 1/2 cup coconut oil
- 1 teaspoon vanilla
- 1 cup gluten free flour
- 1 cup gluten free rolled oats
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 tablespoon cinnamon
- 1/2 teaspoon salt
You will want to mix dry and wet ingredients separately and then together, greease your bread pan with coconut oil or vegan butter, add vegan chocolate chips if you like, heat your oven to 350 degrees and bake for 35-40 minutes!
